Directions

  1. Heat a large skillet coated with cooking spray over medium heat.
  2. Add the onion and bell pepper and cook for 2 minutes.
  3. Add the eggplant, cauliflower, zucchini, and mushrooms and cook for 3 minutes.
  4. Stir in the salsa, vinegar, oregano, basil, and red pepper.
  5. Stir in the broccoli and cover.
  6. Cook for 12 minutes, or until the vegetables are tender.
  7. Season with additional oregano and basil, if desired.
