A Pound of Fruity Delight Cake

- 1 cake, Pound Cake
- 1 (21 ounce) can pie filling, apple, cherry
- 8 ounces Cool Whip, thawed
- 4 ounces cream cheese, softened
- 1⁄2 cup powdered sugar
- 1 teaspoon vanilla
directions
- Slice pound cake lengthwise to make 2 layers of cake. Set aside.
- In mixing bowl, add cream cheese, powdered sugar and vanilla. Mix well then add in whipped topping. Mix until well combined then set aside.
- On cake plate or platter, place one layer of the pound cake. Ice sides only of this layer, building it up higher than the top to make an edge to hold in pie filling.
- Spoon half of pie filling on to cake then top with second layer of cake. Ice sides of cake first, being careful to keep filling in center. Ice top of cake with remaining icing to a fairly smooth surface.
- Spoon remaining pie filling over top and let run down the side on its own. Cover with plastic wrap and keep refrigerated until serving.
