  • Preheat oven to 350*F.
  • Take 1/2 the bag of chips and layer them on the bottom of a greased 13" x 9" x 2" casserole dish. Then place shredded chicken atop the layer of chips. Layer half of the cheese on top of the chicken.
  • In a separate bowl, prepare sauce. Combine salsa, sour cream, cream of chicken, evaporated milk (or heavy cream), and olives and mix well. Pour over casserole, then add the remaining cheese on top. Cook for 1 hour, or until the top is brown and bubbly. Check it when there is about 15 minutes left--you may want to cover with foil for remainder of cook time.

  1. VERY EASY to make! Used only 3 breasts (all I had) and it was perfect, subbed 1/2 & 1/2 for cream and added a can of chopped green chilies that needed to be used up. I also used the whole bag of chips, rather than half of it. Forgot to grease the casserole dish and it still was just fine. I found that it baked in much less time- more like 40 minutes tops. This is so yummy and super quick to throw together. Takes even less time than stated...which is rare! Thanks for posting.
     
  2. One word - Brilliant! I altered it a tad, I added 1 large onion chopped (and cooked) 1 cup of corn and 1 can of mexican style pinto beans to the chicken layer and reduced the chicken to 2 breasts, I agree cooking time is a bit long, 30 minutes did if for me (my oven does run a bit hot though). This will be made again and again, I really loved the creamy layer. I will say this though, if you are on a diet or are watching your fat intake, this may not be the recipe for you. Thanks for posting!!
     
  3. This was AWESOME!! Thanks for this recipe! Only thing I did different was I did not add olives, instead I added a can of chopped green chiles. My family loved it! Only change I will make is to use pepper jack cheese in the future.
     
  4. I completely botched the recipe, and it was still delicious. I had read it a few times before making it and put out the non-refrigerated ingredients on the counter the night before making it so cooking dinner went more quickly. But when I started cooking... My laptop was upstairs in the bedroom... I was down in the kitchen... So I went from memory. I got the ingredients about right in measurement (I left out the olives for personal taste), but I forgot the part about making it in layers. I put a layer of tortilla chips in the bottom of the dish, but then I just mixed everything else together and dumped it on top. And I got lazy and chopped up the chicken instead of shredding it. It turned out to be a perfect dish for teenage boys with requests that I make it again. And now I know I can just mix it all up for an easy meal! Thank you!
     
  5. I made this for dinner tonight along with simple mexican rice and homemade unfried beans. Hubby and son thought is was very good. Son wants the recipe for his gf. I accidently the sour cream out and it was still very good. Will be making this again soon.
