  • Preheat the oven to 350F and line a pie plate with 2/3rds of the pastry.
  • Place the potatoes in a saucepan cover with water bring to the boil then cook for 5 minutes.
  • Meanwhile, heat the butter in a frying pan, add the leeks and sauté for about 5 minutes, stirring from time to time, until softened.
  • Add ham slices to leek and cook for 2-3 minutes, stirring from time to time.
  • Drain the potatoes and add to the ham and leek . Mix well and season with salt, nutmeg and pepper.
  • Place ingredients into the lined pie plate and pour over the cream.
  • Roll the remaining pastry out thinly, cut into strips about 1/2-inch wide then criss-cross the strips over the filled pie. Bake 60-70 minutes, or until the potatoes are cooked through. Serve hot with poultry, meat, game or sausage.
