Ingredients Nutrition

  • 1 lb dried apricot
  • 4 cups water
  • 1 12 cups sugar
  • 12 -15 macaroons
  • sherry wine (optional)
  • 1 cup whipped cream

Directions

  1. Soak apricots overnight in water.
  2. Bring to a boil in same water and add sugar.
  3. Simmer 15-20 minutes.
  4. Cool.
  5. Place half of macaroons in serving dish.
  6. Sprinkle with sherry, if desired.
  7. Add half of apricots on top of macaroons.
  8. Repeat with last macaroons and apricot sauce.
  9. Chill.
  10. Serve with whipped cream on top.
