  • Cake:

  • Combine Sugar and Oil.
  • Add Eggs and beat until well mixed.
  • Mix in Flour, Cinnamon, Baking Soda & Salt.
  • Slowly mix in Carrots & Nuts (nuts optional).
  • Pour into a 9" x 13" pan and bake at 325 degrees for 50 - 60 minutes.
  • Cool Before Frosting.
  • Frosting:

  • Soften Butter.
  • Combine Cream Cheese, Confectioners Sugar, Butter, Coconut and Vanilla Extract.
  • Beat and apply to cooled caked.
  • Apply to Cooled Cake.
