Adi's Shepherd's Pie

  • Fry onions in oil and add to mashed potatoes.
  • Add margarine and salt and pepper and set potatoes aside.
  • Mix ground beef with egg, bread crumbs, salt, pepper, garlic and onion powder. Press beef into a casserole dish.
  • Layer corn on top of beef.
  • Layer mashed potatoes on top of corn.
  • Pat down until smooth, crimp edges with fingers.
  • Bake at 350 for about an hour.
  • Just before serving brush teaspoons oil on potato and broil until nicely browned.

  1. We are big cottage (or shepherd's) pie fans in our house. When I saw this recipe I couldn't wait to try it, I never thought of adding a layer of corn between the meat and the potatoes. I also loved the mashed potatoes mixed with the fried onions, I had the BH and the kids fighting over the crust. Instead of using garlic and onion powder I used fresh garlic and lots of paprika. There's just enough pie left over for dinner tonight, I hid it all the way back in the fridge so the BH doesn't find it first! Thanks, Aviva, I really enjoyed this dish!
     
  2. I made this ahead of time and used it for dinner the next night,it was delish and it kept well over night in the frig. My son took the left overs home and he raved about it too!!! This will be a recipe I will use again for sure.

  4. This is real comfort food! I top it with paprika and let it bake, then get out the way when the teenage boys get a whiff, because you could get hurt. And if there are leftovers, they heat up well.
     
  5. Wow! between simplicity and taste this is a winner!! I also added canned corn and a can of green beans. and some shredded cheddar to the potatoes, but not too much to over power any other flavors. Delish! Good way to get kids to eat the veggies, especially when they can't see them. My BF didn't like the strong garlicky taste but it was right for me. It might have had something to do with me making Cheddar-garlic bisquits also. but it is a definite favorite in this house. Thanks for sharing!

  1. Superb comfort food and a great way to use up leftover mashed potatoes. Instead of the amount of ground beef required I used only one pound and 3 leftover chorizo sausages and only one onion. I also used less salt than suggested and only one tablespoon garlic powder. I topped this off with some leftover grated cheese. Although I used less mashed potatoes (about 1 1/2 cups) this was perfect cooked in an 8x8 pan for a bit over an hour (due to my tempermental oven). Delicious with just a loaf of wholesome bread for the perfect comfort mid-week meal and we still have enough left over for some lunches during the week! Thanks for sharing!
