  • Peel tomatoes and cut into wedges, wash cucumber and core skin with the tines of fork (or you can peel completely) and cut into thin slices. Slice onion using some of the green tops, and then combine all the veggies with the oregano in a salad bowl.
  • Mix together olive oil, lemon juice, salt and pepper, taste and adjust (if you like lots of tang you may want more lemon, more oil if you like it mild). Pour dressing over salad and gently toss to mix.
  • Serve right away or let the salad and dressing mingle awhile - I like mine to sit for 15 minutes or so.

  2. My ingredients were not the freshest and I can imagine this being even more stellar with fresh picked tomatoes and cukes from the garden. As it was, it was very easy to put together and made for a refreshing dinner salad. We let the salad sit as recommended and DH thought it benefitted from a little more oregano. Thanks!   4. I wish I could give a higher star rating for this fantastic salad! This is very easy to put together but the flavors sure make you think it was much harder. Served after being in the refrigerator for about 1/2 hour with grilled chicken. Cant wait to make this again! Made and reviewed for the Culinary Quest 2016 - Greece.

Tweaks

  1. A very refreshing salad! The quality of the salad depends on the quality of your vegetables. I would definitely let this salad sit at least 15-30 minutes to let the flavors marry before serving. You can substitute mint for the oregano and you have a Moroccan salad.
