  1. Over medium heat, sauté the potatoes and onions in butter for 10-15 minutes, stirring occasionally.
  2. Add the sausage, bell peppers, salt, black pepper and cayenne, and continue frying until the sausage is browned, about 5 minutes.
  3. Add more salt and pepper to taste and serve garnished with green onions.
