Alice Snelling's Easy Chili

"Alice raised 6 children so she is an expert at cooking up easy meals. She uses 1 can of cannelini beans and 1 of kidney beans. I liked this chili even though I had never thought of cannellini as being a "chili bean." They are excellent in this chili. Actually, I like the 2 cans of beans called for in the recipe to be cannellini."

  • 1 lb ground beef
  • 1 onion, chopped (optional)
  • 1 garlic clove, chopped fine
  • olive oil
  • 2 (16 ounce) cans tomatoes, chopped (recommended to make one can Rotel brand)
  • chili powder
  • 2 (16 ounce) cans beans, rinsed and drained (choose your favorite ~ Alice uses one can cannelini beans and one of kidney beans)

  • Add a tablespoon or so of oil to a skillet. Brown the ground beef, onions if used, and garlic in the skillet, breaking up the ground beef as it browns.
  • Add remaining ingredients and cook over mediuim low heat for 20 minutes.
  • This chili is delicious if topped with cheese or sour cream and served with crackers.

  1. My changes just include using pinquito beans for the flavor, along with the recommended can of Rotel's tomatos. Otherwise, this was so good, there was nothing left for lunches. The Skinny Mini Peanut Gallery hogged most of it, spooning the chili over tortilla chips.
