All-American Sloppy Joes (Vegetarian)

- 1 tablespoon olive oil
- 1 cup finely diced onion
- 1 cup finely diced celery
- 1 1⁄2 cups boiling water
- 1 (16 ounce) can tomato sauce
- 2 tablespoons mild chili powder (optional)
- 1 teaspoon dried mustard
- 2 tablespoons brown sugar
- 1 1⁄2 cups dry textured vegetable protein (TVP)
- 1⁄2 teaspoon salt
- 1 tablespoon molasses
- 2 tablespoons cider vinegar
- hamburger buns or French roll
directions
- Heat the oil in a medium saucepan, and saute the onions and celery until very tender.
- Add all remaining ingredients except the buns and simmer, covered, for 15-20 minutes.
- Serve mixture on buns or rolls.

This recipe is a wonderful meatless version of the old classic. I think that TVP is a WONDERFUL substitute for ground meat in dishes such as this. AND the dried TVP is a much less expensive than the packages of "soy crumbles" found in the freezer sections. The only changes I made were for my own personal taste. I added a bit of cayenne pepper and some hot sauce, just to add a bit of heat. The sugar and molasses give the sloppy joe sauce a nice, sweet base. For me, I like a little fire too : > I really liked the celery, it gave a nice crunch. Some green peppers might be nice as well. I made the whole recipe, and froze half for dinner another time!
