Alligator Beignets ( Fritters )

"Was originally crawfish recipe but I changed it up by substituting Alligator Tailmeat. Bought the Alligator in my local Supermarket Frozen Food section."

  • After cooking the Alligator meat, mix all the ingredients in a bowl completely.
  • Heat enough oil to fry beignets in a 12 inch skillet.
  • With a Tablespoon, scoop up the mixture and ease into the hot oil one spoon full at a time.
  • Skillet should hold 5 or 6 without touching.
  • Fry to a golden brown on both sides.
  • Prepare Dipping Sauce by mixing ingredients.

Love to cook, camp, hunt, flyfish and tie flys. Am married for 34 years to a great cook(just look at my waistline). I am an anti- vegan(not really I just dont understand the attraction),I do eat my veggies but I am a meat lover. I have 3 children all grown and have 6 Grandchildren . I am a vietnam era vet(stationed in Germany),served in the Army 1972-1975 and Georgia Army National Guard from 1975-1987. I am in the HR Department here at work, in charge of Payroll,thus the handle. I love to grill and smoke food outdoors. I cook some inside but mostly outside.My favorite cookbook so far is the Weber Cookbook.My pet Peeves are Liberals. Much like Vegans,I just don't understand them.Hope I can contribute something useful to this good site. Y'all have already contributed to me.Thanks
