- 1 cup rolled oats
- 16 ounces almond butter
- 1⁄2 cup cocoa powder
- 1⁄2 cup sugar
- 2 eggs
- 1⁄4 cup heavy cream (or more)
- 1 tablespoon vanilla extract
directions
- Preheat oven to 325.
- Prep a 8x8 Pan with parchment.
- Place oats in a food processor, grind until mostly powder.
- Add almond butter, cocoa powder and sugar - mix until it comes together - it will be fairly stiff.
- add eggs and cream, pulse until it starts to smooth out, adding more cream as needed.
- Pulse in vanilla extract.
- Bake for 30 minutes, turn off oven and allow to sit for another 15 minutes - don't open the oven!
- finish cooling on the counter, refrigerate until cold, remove from pan and cut into 2x2 servings.
