Almond Cake

"This was cut from a magazine by my MIL. We first made this in Jamaica as a dessert to enjoy on Christmas Day. We were looking for something that was simple to prepare, with fairly few ingredients and this fit the bill nicely. Imagine our surprise when we discovered how incredibly moist and tasty this was! I'm not a fan of frosting, and this topping is wonderful-be sure not to skip it!"

  • Beat eggs until light and lemon colored. Gradually add 1 2/3 c sugar (remaining is used in the topping), beating until combined. Stir in butter, flour, salt and extract.
  • Spread in greased 13 x 9 baking pan. Sprinkle with almonds and remaining sugar. Bake at 350 for 25 to 30 minutes or until toothpick comes out clean.
