  • 1 cup butter, softened (no substitutions)
  • 1 cup white sugar
  • 1 egg yolk (save the white)
  • 1 teaspoon vanilla
  • 14 teaspoon almond extract
  • 18 teaspoon salt
  • 2 cups flour
  • 1 egg white
  • 2 tablespoons sugar
  • 14 teaspoon cinnamon
  • 12 cup finely chopped almonds

  • Preheat oven to 350 F.
  • Beat together, the butter and 1 cup sugar until light and fluffy. / Stir in egg yolk, vanilla, almond extract and salt. /Stir in flour; mix well. / Pat into a lightly greased 15" x 10" baking pan. / In a bowl, beat the egg white until stiff, then beat in 2 tbsp sugar, and 1/4 tsp cinnamon. / Fold in the almonds into the egg white mixture. / Spread over the base. / Bake 25-30 minutes. / Remove from oven; let cool 10 minutes. / Cut into bars while still warm.
