- 2 1⁄2 cups flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 cup shortening
- 2 eggs, beaten
- 1 tablespoon almond extract
- 1⁄4 cup blanched unsalted almonds
directions
- Mix dry ingredients in abowl. Cut in shortening with pastry cutter or a fork. Add beaten eggs and almond extract, stirring with a spoon until mixed. Preheat oven to 325*. Shape dough into balls the size of a large cherry. Place them on a greased cookie sheet. Press an almond into the center of each cookie. Bake for 25 minutes.
