"almost" Boston Market Creamed Spinach

"This is quite similar to the creamed spinach at Boston Market, well so I'm told anyway! --- this is a great side dish, even people that hate spinach love this, it's great to serve along side a holiday turkey or a ham dinner, or at any meal --- I also like to saute about 2 teaspoons fresh minced garlic and a pinch of cayenne pepper in the butter for about 2 minutes before adding in the flour but that is optional, add in some grated Parmesan cheese too if desired, this complete recipe can be doubled :)"

  • In a saucepan melt butter over medium heat until sizzling.
  • If you are adding in the fresh garlic and a pinch of cayenne pepper then saute in butter for about 2 minutes but do not brown the garlic.
  • Whisk in the flour and 1/2 tsp seasoned salt (or white salt) until creamed together and smooth.
  • Stir in the half and half, or milk (if using) a little at a time.
  • Increase heat to medium and constantly whisk until the mixture becomes thick and smooth.
  • Remove from heat; set aside.
  • Place 2 tbsp butter in saucepan over med heat; add the 2 tbsp minced onion, and cook until transparent.
  • Add spinach and water to pan, lower the heat, and cover.
  • Stirring several times until the spinach is cooked.
  • When the spinach is almost done, add the prepared white sauce, sour cream and Parmesan cheese (if using).
  • Stir well, and simmer until completely blended.
  • Season with more seasoned salt or white salt if desired and black pepper.

  1. This was a fast, simple, pretty side dish. I used cream instead of 1/2 and 1/2 and omitted the sour cream because I didn't have any. I considered subbing yogurt, but it was delicious as it was. Some might prefer the tangy sour cream to cut the richness. The sauce seemed too thick at first, but when the spinach was added, it thinned slightly and was the perfect consistency. I will make this again, soon!
     
  2. My family and I loved this dish. I did u use heavy whipping cream instead of half and half and plain Greek yogurt instead of sour cream and it turned out amazing.
     
  3. I grew up eating the creamed spinach at Boston Market (far enough back when it was Boston Chicken) and I would say that I was ready to be disappointed. When I read the recipe, it seemed to lack the spice element I would expect. I stuck close to the recipe except for the addition of a 1/2tsp of paprika and a dash of nutmeg to the onions. Instead of water, I used white wine, and finished off with an extra 50% of cheese. In the end, it was very flavorful and didn't need comparison; it was tasty in its own right.
     
  4. Three words. O. M. G. I made this with sour dock from my garden, a horrible spinach-like plant that grows like a weed, but this elevated it to superstar status! I used all the optional ingredients, garlic, cayenne and parmesan. The only thing I would do differently next time is eliminate the sour cream. The white sauce is so incredibly yummy as is, there's no need for the tang of the sour cream. Thanks!
     
  5. I've cooked this recipe about half a dozen times now. My family loves it. This recipe is incredibly good. I use garlic, as mentioned in the notes, but I don't use the cayenne pepper because my daughter doesn't like spicy foods. Once I tried using heavy cream but the sauce broke, so I recommend using the recommended half-and-half for rich flavor which is more forgiving than heavy cream. As Julia Child says, bon appetit!

  1. Like carihoover, I substituted 2oz cream cheese for the sour cream. I also added a dash of nutmeg. I added the cream cheese to the white sauce while it was still hot so the cream cheese would incorporate more easily. Great recipe!
     
  2. I made this gluten free... by using a gluten free rice flour. I also used fresh spinach. Note to self chop the spinach before sautéing. :-) however the family loved it!

  4. Kittencal - once again you are the best! This was incredible! Excellent! Phenomenal! Very very close to how I remember Boston Market creamed spinach only better. I added the garlic, but not the cayenne (to be honest, I forgot it). I discovered (too late) that someone used the last of my parmesan cheese and I substituted shredded cheddar with great results right before I discovered I was out of sour cream, too! I left it out as someone else said and didn't miss it - will probably try it with sour cream another time, though. Wonderful, easy and quick. We would give it more stars if we could! Thanks for sharing all of your great recipes!
     
  5. Excellent, I took this to Thanksgiving and it was a hit. I did add the garlic and opted for cream cheese instead of sour cream. Plus a little cayenne pepper in the sauce for extra flavor. I am planning on making this again for Christmas
