Almost Crab Cakes

"This sounds a little weird, but the taste is astounding!! A good way to get rid of some of that prolific zucchini, too!! Small patties make a great hors d'oeuvre for parties. My experience is that zucchini can have different amounts of juice, so the bread crumbs may need to be increased. Also, more Old Bay can be added to taste."

  • 2 cups zucchini, peeled and shredded
  • 12 cup dry breadcrumbs
  • 1 tablespoon Old Bay Seasoning
  • 1 egg

directions

  • Allow zucchini to rest in colandar so excess juice will drain off.
  • Combine with remaining ingredients and form into patties.
  • Fry in oil over medium heat, browning on one side, then turn to brown on the other side.

  1. Have so much zucchini this year and was glad to find another way to fix it. Loved the Old Bay and learned something new about letting the zucchini drain, made alot of difference. I did spray the pan because my husband can't eat fried foods. Very Good!
