Alouette Baby Brie Caramelized Pepper & Onion Pizza

  • 1 (13 7/8 ounce) can refrigerated prepared pizza crust
  • 1 (8 ounce) package alouette baby brie cheese, Original, cut in 1/8 inch strips
  • 2 small yellow onions, halved lengthwise, thinly sliced
  • 3 tablespoons balsamic vinaigrette
  • 1 teaspoon brown sugar
  • 12 cup roasted red pepper, cut in thin 2 inch strips (from 13.4 oz. jar)
  • olive oil
  • 1 tablespoon chopped fresh thyme leave

  • Heat oven to 400°F Place oven rack in lowest position.
  • Grease cookie sheet. Unroll dough on cookie sheet. Press out to 15x12-inch rectangle.
  • Bake 8 minutes or until light golden brown. Remove from oven.
  • Meanwhile, in medium skillet over medium heat, cook and stir onions with 2 tablespoons of the balsamic vinaigrette and the brown sugar 8 to 10 minutes or until tender.
  • Stir in red pepper strips and remaining 1 tablespoons balsamic vinaigrette.
  • Arrange Alouette Baby Brie over partially baked crust. Top with onion and pepper mixture. Drizzle lightly with olive oil.
  • Bake 10 minutes or until Alouette Baby Brie is melted and crust is deep golden brown.
  • Sprinkle with thyme leaves. Cut into 20 squares and cut squares diagonally into triangles.

  1. I'm a bit discerning in my tastes. These look fabulous. With a homemade crust, I recommend my recipe #330617, this could be pushed to 4 or 5 stars easily! My store doesn't carry the Alouette Baby Brie brand, so I used the 8 ounce container of President Brie. Also, I placed the rack in the lowest position in the oven and after the first 8 minute bake cycle, I moved it to the middle because my oven was about to burn the crust! Good recipe! I appreciated it! Thanks, CJ Alouette! Made for PAC Fall 2009.
