Alvin's Potatoes

- 10 red potatoes
- 1⁄2 cup butter
- 16 ounces sour cream
- 1⁄2 lb bacon (fried crisp and crumbled)
- 4 green onions (chopped)
directions
- Depending on the size of potatoes, cut in half or quarter, place in low casserole dish (like a 9x13).
- Place chunks of butter over potatoes.
- Spread sour cream over potatoes (at this point if you are using potatoe toppers INSTEAD of bacon & green onion, sprinkle over sour cream and bake, it should only take 1 package or less). You can find "Potato Toppers in the produce section).
- Bake at 350-375°F for approximately 1 hour minutes, take casserole out of oven and sprinkle the crisp bacon and green onion over top and continue baking for another 20 minutes or until potatoes are tender.
- Edited for baking time. It all depends on the size of potatoes. I find that cut potatoes bake faster. Adjust to suit.

These are OMG good. I had medium size potatoes so I cut them in quarters and it still took quite a bit longer than the posted time to cook so I'll probably precook next time. They were worth the wait though. I took leftovers to work today and everybody that walked through the break room while I was eating asked "what's that?" and "did you make it?" We'll be having these again!

I am a single 52 year young lady, living of course with 2 cats, Mr. Tink & Pricilla (cillagirl). I love to cook and entertain. I also just LOVE my roses. I have around 20 rose bushes and can't wait for Spring when they start blooming. This year I'll be adding Hydrangeas to the colorful display.
