Always Perfect Biscuits

- 2 cups flour
- 1⁄2 teaspoon salt
- 4 teaspoons baking powder
- 1⁄2 teaspoon cream of tartar
- 2 teaspoons sugar
- 1⁄2 cup margarine
- 3⁄4 cup milk
directions
- Preheat oven to 450 degrees F.
- In a large bowl, sift together all dry ingredients. Cut in margarine until mixture looks like coarse oatmeal. Make a well in the center of the dry mixture and pour the milk in the well. Stir dough until it begins to pull together. Turn out onto a lightly floured surface.
- Press dough together and roll out until 3/4 inch thick. Cut into 2-u=inch round biscuits. Place on an ungreased baking sheet.
- Bake in preheated oven for 9 minutes, or until golden brown.

WOW!!! I've been trying to make biscuits for years, and these are just what I've been looking for. My neighbor suggested finding a recipe with cream of tartar, and I think that made all the difference. They were light and flaky. I used half margarine & half crisco, and they were delish!!! Can't wait to make them for our yearly treat of sausage gravy & biscuits for the crowd at the cottage this summer.

I made these the last two mornings- yesterday, I had a bit of trouble (and I think it was because I added all 3/4 cup of milk all at once, maybe I even added too much milk- but it turned out really runny.) So I tried it again today, and what do you know? They turned out perfect! I added small amounts of milk at a time, even though it ended up being almost right at 3/4 cup...odd how that worked out. Thanks for the awesome biscuit recipe- and you were right, they were great smothered in gravy ;-) Made for Fall '09 PAC.
