Amanda's Blueberry Cobbler

"There are only 6 ingredients to it and you can use any pie filling you like, apple, cherry, peach etc. Tastes great with some vanilla icecream! It is so simple, you won't believe how good it turns out!"

ingredients

  • 1 13 cups cooking oil
  • 6 tablespoons milk
  • 1 cup sugar
  • 2 tablespoons sugar (meant to be used on the topping not in the dough)
  • 4 cups flour
  • 2 teaspoons salt
  • 2 (21 ounce) cans blueberry pie filling (any flavored filling will do as long as it is sweetened)

directions

  • Whip oil and milk together with a fork in a bowl.
  • Combine flour, sugar and salt in another bowl.
  • Add oil/milk mixture to the flour mixture and blend well with a fork.
  • Press 2/3 of the mixture into a 9x13 pan and set the rest of the mixture aside.
  • Pour pie filling on top of crust.
  • Crumble remainder of dough on top of pie filling.
  • Sprinkle 2 tbs of sugar on top
  • Bake in the oven for 30 minutes at 400 Degrees.
  • Place a piece of wax paper on top of the dish (do not seal) while it is cooling and let it cool for at least one hour before serving so it can set up. If not, it will become soggy.
  • Vanilla ice cream is a nice addition to it if you like!

  1. I was concerned when I was how much oil this recipe called for! Very easy to put together. We thought the bottom crust was somewhat doughy. I would suggest prebaking the bottom crust than adding the remaining ingredients. The topping was perfect. Made for Spring PAC 2010.

I love to cook. I used to hate it. That was before I became a stay - home mom. I made foods for me and my husband as newlyweds and I know he choked some of it down with a smile. He still jokes to this day about when I made spaghetti and I didn't heat the sauce up. I just poured it over the hot noodles thinking they would warm the sauce - not so! Cold dinner - ick! Well I've gotten a lot better and my ultimate goal is to be the best cook in my family. I like to try new things and especially try to find recipes for foods that most people do not like. My rating system 1 star = will not eat again, will not make again. 2 stars = will not make again, but would eat it, if someone else made it for me 3 stars = Good, not the best I've ever had, but good flavor. 4 stars = Very good. I will make it again on occassion and would even recommend to others. 5 stars = Excellent. The best of it's kind that I've tasted, easy to make, others liked it too. Will make it again and will recommend to others.
