So rich and creamy! I used vanilla flavored coffeemate because I couldn't find amaretto, and added a bit of almond extract to each serving and a Mexican powdered chocolate that is a little grainier and more robust and it was perfect. Also, I scaled it down to 3. I'll make more soon :) Thank you Susan!

I too scaled this down for three. It was amazing! Since I couldn't find the dry powdered amaretto coffeemate creamer, I substituted it with French Vanilla flavored dry coffeemate, and when I prepared the drink I added 1 tablespoon of "liquid" Coffeemate Amaretto creamer and it worked out fine. I also after tasting it added a tablespoon of Amaretto liquor to each mug too, which gave it an extra punch of almond flavor. Delightful either way! Made for the Comfort Cafe Winter 2010.

I scaled this down to half and it still made quite a lot, I found that 4 tablespoons was the perfect amount for my hot chocolate and I also had to add in some sugar, this really brings a cup of hot chocolate to another level, thanks for posting this great mix Sue, this was made for KK's forum Chef's Pick game

I got a smile that 2 lbs of mix makes 1 serving. I don't have a mug any where neat that big! LOL. I made a 1/4 of the recipe and have enough for several cups of this lovely hot chocolate. I have to say that I did use cocoa powder in place of the Quick to remove more sugar and replaced the powdered sugar with a cup of Splenda. The use of the Amaretto creamer is very nice.. Thanks Coffee :D
