  • Preheat oven to 400.
  • In a large bowl, beat egg with juice/milk, oil and vanilla.
  • Stir in flour, sugars, baking powder, and salt until moistened.
  • Stir in nuts and apple.
  • Fill large, paper-lined muffin cups with batter.
  • Mix the last amount of sugar and cinnamon and sprinkle on muffins.
  • Bake for 20 minutes.

  1. Delicious muffins, and super easy to make, too! I did sub out one cup of flour for whole wheat flour, and since I had applesauce to use, I used 1/4 cup applesauce, and 1/4 cup oil. Absolutely wonderful - I'll be making thsese again! Made for PAC Fall 2009.

My husband suggested I rate these 4.5 stars. ;) I made them with milk and the batter was so thick I needed to add an extra splash of milk to incorporate all the dry ingredients--probably about a tablespoon worth. The finished texture was nice, not at all dry, and I really enjoyed them. If I were to rename them to meet my flavor expectations as is, I'd call them Vanilla Apple Nut Muffins. The flavor of the vanilla was more prominant than expected and my apples were quite flavorful baking apples. I'm anxious to try them again using apple juice, but I would reduce the sugar, as they were already plenty sweet using milk. May even try half-milk half-juice. Cinnamon in the batter would also be a nice addition. Thank you for sharing, canadianchocoholic.
