Amazing Peppermint Chocolate Chocolate Chip Cookies!

"These cookies are great for around the holidays (or any time you have a chocolate/peppermint craving!), and they are sure to put a smile on your face! My sister, who is a wonderful baker, came up with this recipe and gave these treats away as a gift! I doctored them up a little, to decorate them on the outside! Have fun and make them your own!"

  • Preheat oven to 350 degrees.
  • Melted Chocolate: Place a glass bowl over a pot of simmering water on the stove.
  • Add 1 cup chocolate chips to the bowl, and stir occasionally, until melted, then remove from heat.
  • Cookie: Combine butter and sugar until well blended.
  • Add eggs (one at a time).
  • Add vanilla, peppermint extract, and melted chocolate -- mix until fully incorporated.
  • Add baking soda and salt, mix.
  • Add whole wheat flour, mixing slowly. Scrape the sides of the bowl to make sure everything is fully combined.
  • Add in Chocolate chips, mix in slowly, or by hand.
  • Drop spoon-fulls of cookie dough onto a prepared cookie sheet, and bake for 10-12 minutes (depending on your ovens temperature).
  • Remove from oven, and let cool.
  • Options for decoration:

  • Melt 1 cup of white chocolate chips, or your choice of chocolate chips.
  • Dip 1/2 of a cooled cookie into the melted chocolate, and place on a cookie sheet lined with wax paper.
  • Immediately sprinkle with festive colored sprinkles to decorate.
  • Let the chocolate fully cool (you can place it in the fridge to speed up the process).
  • Remove from wax paper, and ENJOY -- or share!

My cooking is primarily focused on making sure what goes into their bodies is wholesome, natural, and as organic as possible. Today's fast paced methods of eating (ie: drive-thrus, and microwaves) are kind of what I hope to not let into our home.
