  1. Preheat the oven to 350 degrees.
  2. Sift together dry ingredients (flours, baking powder, baking soda, salt, spices).
  3. Blend oil, sugar and eggs.
  4. Stir in pumpkin.
  5. Add sifted dry ingredients.
  6. Stir in walnuts if desired (I also use butterscotch chips from time to time).
  7. Put batter in to 2 greased loaf pans (I use one large and one smaller one).
  8. Bake for 1 hour to 1 hour and 15 minutes. (Small loaf pans take an hour; large or normal size ones take an hour and 15m).
