Amazingly Perfect Popovers!

ingredients
- 1 tablespoon unsalted butter, melted and cooled, plus 1 teaspoon room temperature for pan
- 4 3⁄4 ounces all-purpose flour, approximately 1 cup
- 1 teaspoon kosher salt
- 2 large eggs, room temperature
- 1 cup whole milk, room temperature
directions
- Preheat oven to 400 degrees F.
- Grease a 6-cup popover pan with the 1 teaspoon of butter. Muffin pans will not yield the same puff results.
- Place all of the ingredients into a food processor/blender and process for 30 seconds. It should be a uniform liquid with no flour balls.
- Divide the batter evenly between the cups of the popover pan, each should be about 1/2 full.
- Bake on the middle rack of the oven for 35 minutes. DO NOT OPEN OVEN DURING COOKING TIME.
- Remove the popovers to a cooling rack and pierce each in the top with a knife to allow the escape of steam.
- Serve warm, preferably right away.

I cook at home, at friends' houses even at other people's parties! I'm not so good at baking, unless the instructions are explicit and 100% correct. I rarely deviate, it seems to me that baking is harder to get right. Give me a stovetop, gas or electric, a grill, a portable propane stove or even a campfire and I'll make your tastebuds soar!
