"The earliest writings record that the ancient Greeks ate something similar to today's crepes as well as our pancakes. Man has probably been eating pancakes in some form for alot longer than the time of the ancient Greeks. Some form of pancake exists in every society known today. In the United States and Canada, pancakes are also called hotcakes, griddlecakes, or flapjacks. Common as a breakfast food, pancakes can be eaten at any meal. Can be frozen after making - cool until room temp and then freeze in freezer bag."

  • In a medium bowl, whisk together the flour, sugar, baking powder and salt. In another bowl, whisk together the milk, egg yolks and melted butter. Pour the wet mixture into the dry and stir until just combined.
  • Preheat a griddle or large nonstick skillet over medium heat. Meanwhile, beat the egg whites to soft peaks. Gently fold the whites into the batter.
  • Grease the griddle and ladle on 1/4 cup portions of batter. Cook on one side until bubbles form and the pancakes are cooked around the edges, 1 1/2 to 2 minutes. Flip and cook through, one minute more.
  • Serve with butter and maple syrup.
