Ancho Chili-Rubbed Beef Roast

"This roast is one of the many good reasons to grow ancho chilies! I found this recipe in our local "Area Woman" and it is a keeper! Enjoy! Bon Appetit! Great for company!"

  • Heat oven to 325 degrees F. Combine rub ingredients; (all ingredients following the roast listed, minus the oil) and reserve 2 Tbs. for potatoes. Press remaining rub onto the beef. Use beef round tip roast.
  • Place roast on rack in a shallow roasting pan. Insert oven proof meat thermometer so tip is centered in thickest part of the beef, not resting in fat. (Do not overcook.).
  • Meanwhile, mix reserved rub and oil and toss with potatoes. Roast Potatoes in a greased baking pan, covered for 1 hour. After 1 hour stir potatoes and leave pan uncovered and cook for another 10 to 15 minutes or until the potatoes are tender.
  • Put the potatoes in the oven during the last hour before roast should be done. I figure in resting time for roast or you can keep the potatoes warm in your convection oven which is what I do, cover back on.
  • Remove the roast when the meat thermometer registers 140 degrees for medium rare; 155 degrees for medium. Let stand for 15 minutes and then carve the roast. Season with salt to your taste.
  • Important - Let the roast stand and rest before cutting or it for 15 minutes or it won't cut nicely!
  • Serve with potatoes.

  1. What a great idea for a spice rub! At first I thought it tasted weird, but by the second bite, it was delicious. I didn't follow the cooking directions, however. I cooked a 4 lb roast at 450 for 15 minutes, then turned it down to 325 until an internal meat thermometer registered 122 degrees. I then removed it from the oven and let it sit for 30 minutes. Perfectly, medium rare and juicy.
     
  2. I scored the beef and place garlic into the slices. Added dried oregano and parsley the the ancho mixture. Let the beef sit at room temperature for 1 hour before placing into the oven. be sure to slice the beef very thin. When sliced the juices were very red from the ancho powder. I roasted the 4 1/2 pound for 2 hours. This procudes a dark crusted roast and a pinf center. Hi! Jelly here! My husband and I live on the Great Plains in the coldest state (feels like it) in the country. My husband and I farm. We grow hard red spring wheat and soy beans. I raise chickens and turkeys too! I have a love for gardening (flowers, veggies, fruits, and berries) and canning, freezing, jelly making, preserving, drying herbs, cooking and baking! We have a golden retriever pup! Our baby! :) Her name is Maisy! 75 pounds!!!!Also, have nine kitties - Sarah, Sebastian, Midnight, Henry, Sam, Star, Garfield, Lilly, and Zeus! Our area is rural and we have a 45 min. drive to the nearest city. It is a long trip there and back! We try to be as green as possible and recycle. We have become very conscientious of our environment. It is our children's future. We carry our our own canvas shopping bags to the market and use a cooler that we keep in the trunk or back of the pickup. No more plastic! We love life on the farm and feel very fortunate to have had so many wonderful experiences in life. Done a lot of traveling and feel satisfied. We make and bottle our own wines. They are delicious! This year's wine is working in the carboys in the basement and should be a great batch. We picked late and they were very sweet and required very little sugar. Got the jelly made and sent some to relatives and friends! It has been a tough season this year....sigh... Soybeans and wheat are harvested and in the bins! Now we hope the market is in our favor! Christmas was quiet as we had a blizzard that immobilized the state for three days...bah humbug...it took us another three days to dig out! Okay. I've had enough snow for the winter!!!! Oy vey.... A little prayer for mankind - Dear God, Bless us all in the New Year...may we have the crops to feed everyone and full bellies, good jobs, roofs over heads and a peaceful world for everyone.
