Angel Food Cake (Rose's Restaurant)

"This cake is from the famous Rose's Resaturant and Bakery in Portland Or. the woman who opened Rose's came to America from Russia as a young woman and used to bake in her very own kitchen!!! then transport the baked goods to her small Bakery every morning! she eventually expanded to a few resturants/Bakery. Sadly I think she passed, and the Restaurants eventually closed, back in the 80's she made 2 cookbooks..this is the description of the cake: FOLLOW THESE INSTRUCTIONS EXACTLY. THE RESULT WILL DELIGHT YOU. THE RECIPE IS WORTH THE PRICE OF THIS BOOK!!! also there is a chocolate version with a marshmallow icing that I will also post seperately that we serve @ every birthday."

  • Preheat oven to 400. Sift flour, add 3/4 c of sugar, and sift the mixture 5 times, Beat egg whites until stiff. Add cream of tartar and salt, continue beating, and very gradually, 1 tablespoon at a time, beat in the remaining sugar. when batter looks shiny and stiff, very gradually fold in the sifted flour mixture and vanilla.
  • Pour batter into a 9" angel food cake pan and bake 10 minutes. Reduce heat to 350 and bake for 30 minutes. Reduce heat again to 300 and bake until cake is done, about 1 hour, total. Remove from oven, turn upside down to cool. when cold, Remove from pan and frost or leave plain.

  1. My family used to enjoy Rose's Angel Food Cake at the restaurant in NW Portland. After it closed I bought the cookbook. This cake has won many baking competitions for most if not all the children in my family. It is easy enough that my son started making it alone by the time he was 9 or 10. It is always a hit with those who inhale (consume) it. I am going to try baking it in cupcake form, today, to be used as a base for fresh Hood strawberries and rum cream for my husband's large luncheon group, tomorrow. The only unfortunate thing about this lovely cake is it has no/little redeeming nutritive value.

I WORK FOR KAISER PERMANENTE HOSPITAL IN THE OB/GYN DEPT. I FEEL LIKE I LIVE MORE THERE THAN I DO AT HOME. I HAVE ALWAYS LOVED TO COOK, IT HAS ALWAYS FACINATED ME...MY FATHER ACTUALLY TAUGHT ME AT A YOUNG AGE. MY MOTHER WAS AN R.N. AND WAS ALWAYS AT WORK. AND SHE STILL CAN'T COOK FOR THE LIFE OF HER, BLESS HER HEART SHE EVEN BURNS TOAST!!! SO I WAS DETERMINED AT A YOUNG AGE THAT IF I EVER CHOSE MEDICINE AS A CAREER I WOULD COOK AND BE GOOD AT IT!!! SO HERE I AM, MOST NEW FRIENDS OF MINE DON'T BELIEVE MY COOKING SKILLS WHEN THEY COME OVER FOR DINNER OR ON OCCASION WHEN I BRING A TREAT TO WORK THAT I MADE IT!! THEY THINK IT WAS STORE BOUGHT OR IT'S TAKE OUT, EVEN MY OWN MOTHER!
