- 2 ounces extra virgin olive oil
- 1 tablespoon minced garlic
- 12 ounces rotisserie chicken, pulled
- 6 ounces basil pesto
- 6 -8 ounces lemon juice, depending on how tart you like it
- 2 ounces tomatoes, marinated and sliced or cut into cubes
- 2 ounces yellow tomatoes, marinated and sliced or cut into cubes
- 12 ounces angel hair pasta, cooked
- 6 ounces goat cheese
- 3 basil sprigs
- salt and pepper
directions
- Cook angel hair pasta as directed and keep warm.
- Meanwhile, in a medium sauté pan, sauté the olive oil and garlic until aroma starts to form. Add chicken, pesto, lemon juice, red tomatoes and yellow tomatoes. Cook for approximately 3 minutes or until chicked is warm. Add heated angel hair pasta and check seasoning, adding salt and pepper if desired.
- Place on three plates and garnish with goat cheese and basil.
