"Using a pre-cooked rotisserie chicken from the grocery really speeds up the preparation of this recipe. I also use Buitoni brand basil pesto from the refrigerated section of the grocery by the cheese, yogurt, etc. I marinate the tomatoes (Recipe# 55309, #55309) ahead of time and have them ready when I assemble the meal (the time needed for marinating the tomatoes is not included below).This dish looks really colorful and appetizing when plated."

  • Cook angel hair pasta as directed and keep warm.
  • Meanwhile, in a medium sauté pan, sauté the olive oil and garlic until aroma starts to form. Add chicken, pesto, lemon juice, red tomatoes and yellow tomatoes. Cook for approximately 3 minutes or until chicked is warm. Add heated angel hair pasta and check seasoning, adding salt and pepper if desired.
  • Place on three plates and garnish with goat cheese and basil.
