  • Brown corn in saute pan on stove.
  • Combine salsa, sour cream, mayo, garlic, cumin, salt, pepper, lime juice and stir until combined,.
  • Place pasta, corn, beans, olives, tomatoes, green & red onion and cilantro in a large bowl. Pour 3/4 of dressing over the top and gently toss until all in coated. Add remaining dressing, if needed.
  • Cover and chill at least 2 hrs or overnight.

  1. Awesome recipe! Huge hit. I did leave out the tomatoes. I love tomatoes. But not a huge fan of them in my pasta salads. I used Mrs renfros habanero salsa in this. We couldn’t get enough of it. Tons of flavor. Thanks!
