Anne's Meatloaf or Hamburgers

"Yummy recipe from my friend's mother. Posted for safekeeping. Recipe amounts are somewhat flexible. The cooking time shown is for hamburgers. I don't have a specific baking time for the meatloaf, because I usually make this as hamburgers. A flatter meatloaf needs less baking time than a taller one."

  • 1 12 - 2 lbs ground beef (Angus 15% fat)
  • 12 cup onion, coarsely chopped (red or yellow onions)
  • 2 eggs
  • 14 cup chopped celery (or half celery and half carrot) (optional)
  • 13 cup ketchup (Trader Joe's organic)
  • 3 tablespoons ketchup (for top of meatloaf) (optional)
  • 12 cup breadcrumbs, any kind even if not very dry (try low-carb bread)
  • garlic salt, pepper

  • For meatloaf:

  • Mix everything together.
  • Pat into an ungreased baking dish about 2” deep. (No greasing needed if meat used is 15% fat.) Pour additional dabs of ketchup on top.
  • If using a loaf pan, make a groove along the top of the meat and pour ketchup into the groove.
  • Bake at 350 degrees. A flatter meatloaf needs less baking time than a tall one.
  • For hamburgers:

  • Use just a bit of bread crumbs or eliminate entirely; pan broil.
