  • In a large soup pot, boil the rice in water for 30 minutes.
  • Rinse.
  • Boil rice 1 hour more in 1 large can of chicken broth.
  • Add chopped onion, carrots, and celery.
  • Cook until veggies are tender.
  • Add cream of potato soup and milk.
  • Add cubed velveeta and cook on low til melted.
  • Thin with more milk, if desired.
  • Heat slowly -- Do not boil.
