Antillean Sauce for Meat

  • Mix all ingredients in saucepan.
  • Cook over medium heat until vegetables are tender and sauce begins to thicken.
  • To stretch recipe, add more tomatoes.
  • Serve with chicken, fish, or any meat of your choice, with hot rice.
  • Option: Add 2 tsp barbecue sauce in place of ketchup.

  1. A really delicious sauce, perfect over rice. I made it without the butter and it was still great; we had it over bowls of brown rice and tofu.
     
  2. This is incredibly good stuff. I used veg-friendly Worcestershire sauce, and had no tomato paste on hand, but it's still flat-out yummy. Served with baked tofu and white rice - - and I have to add that this concoction on white rice will make you want to eat an entire pot of it. Definitely a keeper!

After being, "OzCoMartha" because of having lived for three years in Australia and then moving to Colorado, I have decided to "turn over a new leaf." I chose this name because many moons ago I used to be able to "chirp" like a cricket and the "silent" refers to the present time when I'm taking a break...But, perhaps after a season, however long I decide that needs to be, I may be back and then I will fill in more details about myself...
