"A restaurant I occasionally stop at had several sides you could choose from to go with your sandwich. Their antipasto salad is my favorite. This restaurant is 50 miles from where I live. I decided to make my own. It is for my grandkids, Nolan and Madelyn"

  • 3 lbs roma tomatoes (fresh and diced)
  • 1 large red onion, thinly sliced
  • 14 ounces quartered artichoke hearts, drained
  • 3 78 ounces sliced black olives
  • 12 lb cubed ham
  • 12 lb cubed turkey
  • 14 lb thick sliced and finely diced genoa salami
  • 12 ounces of zesty italian salad dressing roasted garlic Italian vinaigrette dressing
  • 1 (3/8 ounce) package Good Seasons Italian dressing (dry mix)
  • 16 ounces mild pepper rings, with juice
  • garnish with feta cheese

  • Mix together in stainless steel bowl. Store any leftovers in refrigerator.
