Apple and Cheese Salad

ingredients
- 1 firm juicy eating apple
- 1 tablespoon lemon juice
- 1 stalk celery, chopped
- 1 ounce seedless raisins or 1 ounce craisins
- 1 ounce walnuts, roughly chopped
- 2 ounces cheese, of your choice, cut into cubes
- 2 tablespoons low-fat plain yogurt or 2 tablespoons Greek yogurt
- 1 pinch cinnamon
- 1⁄4 teaspoon honey
directions
- Wash, but do not peel the apples, remove the core, quarter and then cut the apples into triangles or cubes, mix at once with the lemon juice.
- Add the celery, raisins or craisins, walnuts and cheese and mix together.
- Flavour the yogurt with a little cinnamon and honey and mix well, and then mix the salad and yogurt together.
- Put the salad in your lunchbox and refrigerate - or serve.

This was pretty tasty. I used the basic's of this recipe for a side salad. I used mayo instead of yogurt. I also added a pear cranberry conserve dressing (pear cranberry conserve, olive oil and golden balsamic vinegar). I also subbed pecans for walnuts. Since there is seasoning and sweet in the pear cranberry conserve I omitted the honey and cinnamon.

I'm not totally sure how to rate this salad, or describe it!! I made it bc it looks so good. I stuck pretty closely to the recipe. It was good, totally different than anything I've ever made or eaten. My 7 yr old son tried it, and wouldnt stop eating it. I only made about one serving, just in case I didnt like it. I had all the ingredients, and often do, so I'm sure I'll make it again. Its pretty healthy too, if you think about it. I added some sliced red grapes too. But maybe bc its I'm 9 months pregnant, and have been craving those a lot lately. All in all, its yummy, and will make again. Thanks bluemoon!

July 2008 update: VERY happy to be back on Zaar after about a two year absence due to having had no internet connection at home, and having been too unwell for a time so that getting re-connected wasn't even a priority!
