Apple and Toasted Pecan Salad With Honey Poppy Seed Dressing

"This recipe is from my friend Joan and is one of our favorites. I am guessing on the amounts for the salad ingredients. You can proportion them to taste or based on how many people you are feeding. The dressing recipe makes enough for two good-sized salads. You can make this a main dish salad by adding cooked chicken."

  1. LOVE THIS!! It is my new Favorite Salad. Light, crisp and full of flavors. Used head lettuce, cranberries and a Macintosh Apple - fresh, sweet, nutty, spicy and a little salty - all wrapped in mouthful!
     
  2. Excellent salad!!!! I made a few substitutions for the salad by using green onion, granny smith apple and shredded monterey jack cheese as this is what I had on hand and needed to use up. I left the cranberries/raisins off due to family taste. The only change I might make next time is to use a little less honey in the dressing as it was a little on the sweet side for our tastes. I loved the combination of the flavors of the onion, apples and pecans!!!! Will definitely make this salad again!!! Thanks Al Al for a great recipe. Made for spring PAC 2008.

  4. Terrific salad! I made the version with a cooked chicken breast as a meal and loved it. I made per directions but found I did not have cider vinegar, so used rice vinegar instead. I believe it would have more "pop" with the cider vinegar. I may try adding a bit of lemon zest to the dressing next time for a different flavor. Thanks for posting, Al Al, this one's a keeper!

  1. One of the best salads I have tried in ages. I served this for Rosh Hashannah, you know the apple and honey day. Perfection. The blend of the honey, apple, red onion and feta is a winner all the way. The only change I made was using Unflavored coconut oil in place of unhealthy soybean oil. It worked perfectly. Otherwise don't change a thing.

I'm a stay at home mom of a 5 year old boy, a 3 year old girl and an almost year old sweet baby girl. I love to cook (it's what I do for fun as well as out of necessity) and to entertain--and am finally learning to enjoy doing the dishes afterward. :) My husband loves to try new foods and likes lots of flavor, so it makes cooking really fun! We also have recently been studying a lot on health and nutrition and have been enjoying experimenting with new recipes that have a lot more whole food ingredients. I am learning why I always liked home-cooked food better than packaged and prepared stuff. :) I love my family and enjoy feeding them well! I mainly post recipes for my own convenience (nutritional facts, to get them off the little scrap of paper and where I can find them...) but if anyone else can use or enjoy them, go right ahead! Maybe someday I will get all of mine on here, but for now, I love looking at all of everyone else's recipes and have gotten some great "keepers" for our family.
