Apple Braised Chicken

  • In a large, heavy-bottomed skillet, warm oil over high heat.
  • Toss chicken with flour in a medium bowl, patting off excess.
  • Place chicken in skillet and brown well on both sides.
  • Remove chicken from pan and set aside.
  • Reduce stove temperature to low and add onion to skillet.
  • Sauté, stirring often, until onion is tender and lightly browned.
  • Stir in apples, cider, chicken broth, salt, ginger and chicken.
  • Bring to a simmer, cover and cook for 30 minutes.
  • Use a slotted spoon to transfer chicken, onions and apples to a serving dish.
  • In a small bowl, whisk together cornstarch and 2 to 3 Tbs of pan juices.
  • Combine cornstarch mixture with remaining pan juices, whisking constantly.
  • Simmer for one minute.
  • Pour sauce over chicken and serve.
  • Yields 1 chicken breast and about 3/4 cup of apple-onion mixture per serving.

  1. Very Very Tasty. The only problem I had was that I could not get the liquid to thicken. Didn't bother us much, though. I think I may add more apples next time. Nice flavor. Very moist chicken.
     
  2. Mmm-mmm good! I made this for dinner tonight & it was a hit! I did a few things differently, but nothing that would alter the rating. I diced the chicken into cubes since I didn't have any cutlets, therefore I also diced my onions & chopped my apples. I ended up going ahead & seasoning the flour so I went ahead & added the ginger at that point along with some salt, pepper, garlic, & cayenne. I used olive oil out of preference and did an extra teaspoon. I also had to use apple juice since I didn't have any cider & a bullion cube for the broth. The sauce thickened up perfectly with the cornstarch and I served it with rice & stir-fry veggies. A perfect meal! Also, I'm still double checking this, but with my brands & changes, I calculate these out to 4 points per serving! It probably is more likely to be 5 but that's still great for such a flavorful & filling meal! Thanks Tish!
     
  3. My husband said (after his second helping), "That was delicious! That's a saver." And he is right. Based on the other reviews, I added another apple and doubled the amount of ginger. Sauce was thick and delicious, and I'll make it again for sure. Thanks!
     
  4. I was in a savory mood and added fresh sage while cooking the chicken. The chiken and apples were quite good but the sauce was thin and undistinctive.
