Apple Cake

ingredients
- 1 cup vegetable oil (canola)
- 1 cup brown sugar
- 1 cup white sugar
- 3 extra large eggs
- 2 1⁄2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3 tablespoons Kahlua
- 3 1⁄2 cups apples, chopped
- 1⁄2 cup raisins
directions
- Preheat oven to 325°F.
- Grease and flour a 10" spring form pan.
- Mix sugars with oil with hand mixer.
- Add eggs and beat well.
- Sift flour, baking powder, baking soda, salt and cinnamon in separate bowl and then incorporate into the egg mixture until well blended.
- Fold in Kaluha, apples and raisins.
- Pour into pan and bake for 1 1/2 hours or until a toothpick inserted in the center of cake emerges clean.

Anne Lindsay is my favorite cookbook author, we have similar tastes and there are very few of her recipes that I have tried and have not enjoyed.
