Apple Cake

"This is the very first cake I ever made as a child, and I've been making it ever since. It is great right out of the oven served with either ice cream or fresh whipping cream. The batter is quite thick and you will have to spread it to fit the pan. Enjoy!"

  • Cream sugars and butter until light and fluffy.
  • Add eggs and combine.
  • Mix dry ingredients together and add to butter mixture.
  • Add apples and combine.
  • Spread batter in a greased 8 x 11 pan. Bake at 350 for 45 - 60 minutes, or until a toothpick inserted in the middle of the cake comes out clean.

  1. Have made this twice now as the 1st time I took it to work and my coworkers devoured it and told me I needed to make it again. 2nd time my family did the same. My hubby doesn't say a lot but when he goes for 2nds after a big meal I know it was good. I did have to make one adjustment by adding 1/2cup of apple juice to the mix to get a smooth batter then I could spread well in the pan. Left my apples in thin wedges as the first time they were the extra I had left over from making pies and since it worked so well I did the same the 2nd time. This is definitely going on my regular have to make list. Thanks for a great recipe cooking for boys!!
     
  2. This was excelent I wasnt sure when I started but the taste was fantastic. I added 1/2 cup of chocolate chips and I didnt serve anything with it. Wonderful recipe thanks for posting.

<p>Updated to say that the above photo is of me and my mom, taken some 40 years ago on the Santa train in Saskatoon Sk. My dad worked for Eaton's and the train was for employees and families, a Christmas party of sorts. My mom passed away 6 years ago at Christmas time, and this year my sister gave me this photo in the most beautiful picture frame! I will treasure it always. <br /><br />I have been cooking since I can remember. Some of my earliest memories include making bread with my dad. He loved to cook, but not your everyday cooking - he was partial to making fun food as he called it - everything from fudge to home made onion rings and donuts! <br />Now I have three boys of my own and I'm passing the love of creating on to them. <br />I'm lucky to be able to stay at home with them, and I take pride in making everything from scratch - ok, maybe not Everything - we do order in the odd pizza! <br />I read cook books like novels always searching for new inspiration. My boys are not fussy so I'm able to prepare all kinds of ethnic foods and most recently have been experimenting with Indian food. <br />I Love Recipezzar and just finished my first swap - the holiday stocking swap.
