1. Excellent and easy. Healthy and flavorful. Used fresh pineapple. Next time I'll try raisons. This is the first recipe I've even come close to the estimated prep time, hence the 5 stars. Well, that and the flavor.

 2. Simple, delicious, healthy, and f-a-s-t!!!! Thanks so much.

 3. This was a light, simple salad that was very refreshing alongside the heavy pasta dish I made for lunch. I liked the cinnamon flavor! I only added a dash... the hint of cinnamon might have been my favorite part of the salad. I used plain Greek yogurt; the 2 tablespoons was plenty to dress my salad. Like another reviewer, I added a handful of raisins, which were delicious. Also, I used fresh pineapple instead of canned pineapple. The only change I would make in the future is to slice or dice the apple instead of grating it; the crunch of the apple would have been fantastic.

 4. I didn't care for the cinnamon flavor, but felt the salad needed some zing, so I added a splash of rice vinegar. Also, 2 tablespoons of yogurt is not nearly enough to dress 2 cups of salad, I added about 3 times as much; used vanilla yogurt and sprinkled some sugar. Added yellow raisins, as suggested by another reviewer, and think next time will use regular raisins as they have higher acidity. Plus threw in some toasted chopped walnuts. With all these alterations, the salad was excellent and received well by a crowd at a potluck. Thank you for the recipe.

 5. WOW! This is really wonderful. I'm not a big fan of carrot salad because so many have a heavy mayonnaise base. This recipe is light and refreshing allowing the true flavors to come through. I am now a convert and will be making this salad again.

My rating system: (I don't like giving bad reviews, so if I don't like it, I'll just not review it.)

5 Stars OMG, this is one of the most amazing things I've ever eaten! I can't stop eating it, and I've eaten myself into a food coma.

4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again.

3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do.

I love to eat! And I love to cook. I tend to take over the kitchen when I get in there. Even the dog knows the command get outta my kitchen! LOL. Cooking for other people and trying new recipes or foods is FUN! I have a small (but growing quickly!!) cookbook collection and one of my favorite things to do is to read recipes and plan meals. Rachael Ray, Horn of the Moon and Moosewood are favorites of mine.

We spend a lot of time outdoors camping, hiking and backpacking. Yup. I cook in the woods too! I've made deals with my hiking buddies... If they carry in my food, I'll cook for them. I recently published a backpacking cookbook.
