  • Sprinkle apples with lemon juice to avoid discolouration. Set aside.
  • Mix first six ingredients well in a large mixing bowl. Set aside.
  • Combine bran, flour, baking powder, baking soda, spices, and salt. Add to wet ingredients, stirring just until combined. Fold in apples and walnuts. Remember, overmixing makes tough muffins.
  • Fill 30-36 greased muffin tins 3/4 full and bake at 350F for 20-25 minute.
