ingredients
- 1 1⁄2 cups all-purpose flour (or whole wheat flour)
- 1⁄2 cup granulated sugar (or brown sugar)
- 1 pinch salt
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1⁄3 cup applesauce
- 1 egg
- 1⁄3 cup milk
- 1 teaspoon vanilla extract
- 2 apples (peeled & chopped)

Topping
- 1⁄4 cup brown sugar
- 1 1⁄2 teaspoons cinnamon
- 5 tablespoons flour
- 1 cup oats
- 1⁄2 cup applesauce (or just enough milk to make it stick, but still crumble)
directions
- Preheat oven to 400 degrees. Grease muffin tin.
- Mix topping ingredients together in a small bowl, set aside. Peel and chop apples, set aside.
- In a bowl, stir together flour, baking powder, salt & cinnamon.
- In another bowl, whisk egg, apple sauce & milk. Stir in sugar & vanilla. Add to the flour mixture, stir until mixed. Fold in the apples.
- Spoon into prepared muffin tin and evenly sprinkle on the topping.
- Bake for 20 to 25 minutes, or until inserted toothpick comes out clean.

Yup, these are low fat, alright. The muffin itself is decent. It is moist on the inside, but really dry on the outside. The topping however, was way too moist when I followed the directions. It wasn't crumbly at all, but the consistency of thick oatmeal. I increased the flour a bit, until it had a crumbly texture. But that made it very dry and chewy. Over all, the recipe is just ok.
