Apple Cinnamon Raisin Muffins

"My doctor just put me on a low calorie diet so I've been collecting recipes for foods that will satisfy my love of food as well as not put me over the caloric limit! I came across this recipe and they are YUMMY! Plus according to the original recipe they are only 128 calories each!"

  • Mix dry ingredients in mixing bowl. Beat egg substitute and whip in oil, milk, and applesauce. Add to dry ingredients and mix until flour is just moistened. Stir in raisins. Fill muffin tins 2/3 full. Bake for 25 minutes at 400 degrees. Remove muffins from tins immediately. Makes 12 servings.

Like most everyone else on this site, I LOVE to cook. I really enjoy trying new recipes and adding my own flair to them. I never make a dish exactly the same way twice, I'm always improving it. Plus I tend to improvise a lot when I'm in the kitchen.
