"Another recipe for a not so local Farmers' Market here in our state. Wish I could go to it every Saturday. I've not tried this but don't want to misplace the recipe."

3 cups cabbage, chopped
¹⁄₃ cup mayonnaise
2 apples, unpeeled, cored & chopped
¹⁄₃ cup brown sugar
1 large carrot, grated
1 tablespoon lemon juice (to taste)
2 green onions, finely chopped

directions

In a large bowl, combine cabbage, apple, carrot, and green onions.
In a small bowl, mix together mayonnaise, brown sugar, and lemon juice.
Pour dressing over salad and mix well.

I made this today and had some with a ham and cheese sandwich for lunch. I'm glad that there is a lot more in the bowl because it's excellent. I used just 1 Tbsp of Splenda brown blend and, for me, that worked very well for the sweetness. Used a crisp Gala apple that was quite juicy, yum. Slaws are one of my favorite salads and this one did not disappoint in any way.
