Apple Cranberry Chicken

"I made this up because I thought the flavors would match perfectly--and they do. The balsamic vinegar is really the key ingredient and adds a nice zip. This is for one serving, but it can be doubled, tripled, etc. to feed a larger crowd."

  • Preheat oven to 350°F.
  • Cut chicken into chunks or strips and dice apple.
  • Using a vegetable peeler, peel carrot into strips and sauté until soft.
  • Add salt and pepper during cooking process.
  • Deglaze with balsamic vinegar (as much as you want, actually) Stir in apple sauce, cranberries, diced apple, cinnamon, chicken, then pour into oven proof baking dish.
  • Bake for 15- 20 minutes or until done.
  • Season with more salt, pepper, cinnamon, sugar if desired.
  • Note: Feel free to change the amount of any of the ingredients.
  • The above measurements are approximates because I didn't measure when cooking this recipe.

  1. I liked this recipe, but after a few bites the balsamic and sweetness was a bit too overwhelming. I was pretty liberal with the balsamic and added 1/4 cup to the pan. If we try this again I will only add 2 tablespoons and see if that works better. It also didn't stand on its own very well, may need to serve with rice or barley to give it more weight.
     
  2. This was fab. I found a cheese grater was best to grate the carrots, sometimes I use it to grate apples into my recipe too so I think I'll do that next time to create a kind of warm slaw. Added UNsweetened dried cranberries, UNsweetened apple sauce, and walnuts as well.. Completely neglected to add sugar but it still was a bit too sweet for my taste. Love this recipe for fall though, its exactly what I was looking for. I will definitely keep it and experiment with it.
     
  3. Very tasty! I used dried sweetened cranberries, which worked pretty well but the end result was almost too sweet for a dinner dish. Would recommend using fresh berries if available, or unsweetened apple sauce. Doubled, the baking time was about 45 min.
     
  4. An AMAZING recipe. I left out the carrot as I don't like, but for the rest it was simply perfect. It was a gorgeous dish, looked stunning as i presented it in the dish it was baked in, had a heavenly aroma and was an amazing mix of tastes. I will DEFINITELY do this again. My dinner guests loved it.

I like to cook and bake, but I don't like to limit myself to cookbooks all the time, so I experiment and come up wth my own recipes and tweak other recipes to create my own. Baking is what I enjoy the most, especially hearth breads.
