  • Preheat oven to 350 degrees F. Grease an 8x8x2-inch pan. In a large bowl, mix apple sauce, brown sugar, oil and egg with a spoon. Stir in flour, baking soda and salt. Mix in cranberries and pecans. Spread batter in prepared pan. Bake 27-32 minutes or until a wooden toothpick inserted in the center comes out clean. Cool.
  • Glaze: Place white chocolate morsels in a plastic bag and microwave on 70% power for 30 seconds. Microwave an additional 10-20 seconds until smooth. Snip corner off bag. Drizzle white chocolate over bars. Allow to set and cut into 2 inch squares.

The photo above is of our bad boy Remington. He was named after a Charles Wysocki painting and came into our lives as a wild and desperate stray. It took two years to tame him and now he is a big baby. He shares his domain with Frederick Norris the Literate (also named after a Wysocki painting and who fell from the sky into our front yard one cold November night and never left) and Snoopy, a petite pastel calico who is a grumpy old lady that growls like a lion at the other two. Our beloved hiking dog died June 8th at age 15. RIP, Buddy! I live in a small town with a big university and have never lived anywhere else. I homeschooled my daughters and now one is away at university and the other is in community college. I have lots of experience cooking for large groups, including last summer's job preparing three meals a day for ninety people at a girls' camp. I prefer my current job at a small coffee shop where I make quiche and pasta salad a couple days a week. My younger daughter and I are Pampered Chef consultants to raise money for her college fund.! I have been married for 24 years and both sets of parents live nearby.
