Apple Dumplings

"This is such a great fall recipe! Delicious and different. They are basically apple cinnamon rolls -- not sure where the name comes from."

  • For sauce~In a large saucepan, combine 2 cups sugar, the water, butter, 1/4 teaspoon cinnamon, and nutmeg. Bring to boiling and boil for 5 minutes; set aside (should have about 2 cups sauce).
  • For dough~In a large mixing bowl, combine flour, baking powder, and salt. Using a pastry blender, cut in shortening until pea size. Make well in center. Add milk all at once. Stir just until moistened. Knead dough on a lightly floured surface 10 to 12 strokes or until nearly smooth. Roll out to 12x10 inch rectangle.
  • For filling~Combine 1/4 cup sugar and 1/2 teaspoon cinnamon; set aside. Sprinkle apples evenly over dough. Sprinkle with sugar mixture. Roll dough into spiral, starting from a long side. Pinch seam to seal.
  • Cut into twelve 1 inch thick pieces. Place in 13x9 baking pan. Pour sauce over dumplings. Bake in a 350º oven about 50 minutes or until golden.

  1. This is one of those dishes where you think you're not sure if you like it, so you keep going back to the dish for another spoonful, and soon you've eaten half the pan. I guess that means you like it. It is very sweet, so if you like sweet, you'll be in heaven. The sugar syrup looks like way way too much to be pouring over the pan of rolls, so I used only half at first. Checked halfway through baking and all the syrup had been absorbed, so I poured on the rest, and by the end of baking it was all absorbed. The edges get chewy and sticky. I made some changes to make it vegan, and some to make it a bit healthier, although it has so much sugar in it there's not much point in trying to make it health food. Still. I used: non-hydrogenated margarine instead of shortening, soy milk instead of cow, and half whole wheat pastry flour. Used the food processor to make it easier. Made the dough in the processor and shredded the apples in it as well. When I make it again I will add nuts to the filling to give some crunch, and probably add more spices.
