Apple Enchiladas

"I was given this recipe on a scrapbook retreat. We stayed at a bed and breakfast and the innkeeper gies out the recipes for the things she makes during the stay on the last day. It was served for breakfast but would be good for dessert too, with ice cream"

  • Preheat oven to 350 degrees.
  • Mix the softened cream cheese and powdered sugar together until smooth and no lumps are visible.
  • Place 2 TBSP cream cheese mixture and 2 TBSP apple pie filling on each of 8 tortillas. Roll up as you would an enchilada and place on a greased jellyroll pan or oblong cake pan.
  • Pour the melted butter over all. Mix the granulated sugar and cinnamon and sprinkle over the top.
  • Bake for approximately 20 minutes.
  • Remove from oven and let cool for 10 minutes, frost (if desired) just before serving.

Hi my name is Shree. I love cooking although sometimes I get stressed instead of enjoying it. I have been collecting cookbooks and recipes that Id like to try for most of my life. I even started writing a cookbook one time. I never finished it though LOL! I still collect recipes and I like to try my own twist on most of them. I guess Im famous for my deserts, but I like cooking all kinds of dishes. I like to find things at a restaurant that I can recreate at home with similar ingredients.
